Mona, Tasmania’s Museum of Old and New Art, is seeking an exceptional and passionate hospitality leader to become our Director of Hospitality. We need a strategic industry professional who can continue to elevate Mona's offering, ensuring exceptional hospitality experiences across all our venues, while maintaining the flexibility to adapt to our dynamic environment.

Our venues and offerings are diverse and one of a kind. They are: 

  • The Source Restaurant, overlooking the Mona Lawns, is a haven for visitors to enjoy fine food, classic cocktails and the Museum Wine List. 
  • The Faro Restaurant, located in the museum's Pharos wing and illuminated by James Turrell art pieces, is inspired by lights, colour, taste, ambience, and music. 
  • The Void, Tasmania's best cocktail bar, features an extensive Mezcal collection and exhibition-inspired drinks, with a focus on sustainable drink production. 
  • The Moorilla Wine Bar showcases Moorilla, Domaine A, and Moo Brew beers, serving deli-style offerings such as oysters, cheese, sandwiches, cakes, and coffee. 
  • The Lawns is home to the Heavy Metal Kitchen, where the team cooks on fires year-round, often featuring whole beasts. 
  • Mona Pavilions are 8 luxury chalets overlooking the River Derwent, operational Thursday to Monday.
  • Functions & Special Events are focused on showcasing the very best of Mona, from external clients, to Mona Stakeholders & Mona Partners and also include Exhibition Openings, Fundraising Galas & Events for the Material Institute, plus private events for the owners.

Our food philosophy, based on David & Kirsha's evolving view of the world, is mainly plant-based, regionally focused, driven by quality, and includes wild-shot meats and line-caught seafood. This works hand in hand with our Zero waste philosophy, which aims to minimise waste and conserve fossil fuels by using reusable products like tin plates, market cutlery, hemp napkins, and polycarb cups, proving sustainability is achievable with the right effort.

As the Director of Hospitality, you will be responsible for developing and implementing business strategies, achieving team goals, and maintaining high service standards across all food and beverage venues. You will collaborate with your venue management team, senior leaders, and key shared services to ensure compliance, monitor financial performance, and uphold Mona's unique ethos.

The Gig:

  • Provide direction and leadership to the Hospitality management team, ensuring smooth operations and a high standard of service for all venues. 
  • Develop and implement strategies to improve and grow Mona's hospitality offerings in line with broader strategic and creative objectives.
  • Identify and lead training and professional development for the hospitality team, aiming to create a versatile and skilled staff base. 
  • Mentor and coach department managers and supervisors, supporting their growth and their teams' development.
  • Collaborate with the Executive Chef and kitchen team to deliver exceptional dining experiences. 
  • Ensure productive and efficient work environments with consistent operating procedures that maintain quality and service standards.
  • Role model and enforce responsible work practices, adhering to HR and WHS policies and protocols.
  • Hold responsibility for the financial oversight on delivery against the overall operational budget.
  • Build and maintain strong relationships with senior leaders, industry stakeholders, and guests. 
  • Promote Mona's philosophies through customer experience, venue operations, functions, and events.
  • Beyond Mona, be a leading industry figure in the Tasmanian hospitality industry.

The You:

  • Extensive management experience in a senior strategic role within the hospitality industry. 
  • Proven ability to manage multiple business units and coordinate bespoke functions and events.
  • Strong skills in people management and leadership strategy. 
  • Able to lead by example, motivating and cultivating a positive team and workplace culture.
  • High-level communication skills with the ability to interact and collaborate effectively with all business units. 
  • Comfortable handling conflict and providing constructive feedback.
  • Ambitious to provide a unique and evolving hospitality experience.
  • Passionate about coaching and mentoring hospitality professionals from diverse backgrounds.
  • Thrives in busy, crowded environments and enjoys engaging with people.
  • Approachable and capable of leading a diverse team.
  • Driven by a commitment to exceptional customer service and guest experiences, with a talent for unique events and VIP interactions.
  • Capable of remaining calm under pressure and managing conflicting priorities.
  • Flexible with work hours and days to suit operational needs.
  • RSA certified with strong product knowledge and familiarity with WHS hospitality processes.
  • Additional relevant training is a plus.
