The venues at Mona operate under the leadership of Executive Chef Vince Trim, delivering innovative and exceptional dining experiences that showcase the best of Tasmania’s produce. From the Source and Faro to the Wine Bar and Heavy Metal Kitchen, our kitchen team delivers a food experience that is diverse and ever-evolving.
We’re looking for an experienced Senior Head Chef to take on a 2IC role, with a primary focus on Heavy Metal Kitchen, Wine Bar, and Functions. You’ll be based in the production kitchen, driving high-volume, high-quality service and ensuring seamless operations across Heavy Metal Kitchen and the Wine Bar. You’ll also oversee kitchen management and deliver exceptional service for both private and corporate events.
Working closely with the Executive Chef, you will lead and mentor senior chefs, oversee kitchen operations, and uphold the highest standards of food quality, creativity, and efficiency. While your core responsibility is within Heavy Metal Kitchen, Wine Bar, and Functions, you’ll also play a key role in the broader strategic and operational management of all Mona kitchens—fostering a positive culture of innovation, collaboration, and continuous improvement.
The gig:
- Act as 2IC to the Executive Chef, overseeing daily operations across all kitchens.
- Lead, mentor, and develop kitchen teams to maintain high performance and professional growth.
- Collaborate with the Executive Chef to create and implement innovative, seasonal menus.
- Ensure consistency in product quality, service, and presentation standards.
- Oversee kitchen administration, including rostering, timesheet approvals, recruitment, and performance management.
- Manage ordering, stock control, and supplier relationships to optimise efficiency and minimise waste.
- Ensure strict adherence to WHS, food safety, and hygiene standards across all venues.
- Oversee kitchen budgeting and cost control, working to maximise profitability without compromising quality.
- Maintain kitchen presentation and asset management, ensuring facilities are kept in peak condition.
- Work closely with FOH teams to deliver a seamless and exceptional guest experience.
- Availability to work weekends and public holidays.
The you:
- Extensive experience in a senior leadership role within high-end restaurants or hospitality venues.
- Proven ability to lead, inspire, and develop teams while maintaining high service standards.
- Strong operational oversight and administrative skills, with experience managing multiple kitchens or venues.
- A creative and confident cooking style, with a deep appreciation for quality ingredients and innovative cuisine.
- Passionate about mentoring and developing talent, fostering a positive and professional kitchen culture.
- Exceptional organisation and time management skills, thriving in a fast-paced, high-pressure environment.
